Kid's Picnic Recipes
One of the most enjoyable and least expensive ways to spend quality time with your kids
is to have a picnic. Whether you plan a day at the beach, a local park or even just a
few hours in the backyard, a picnic can offer the perfect opportunity to relax, play
games, and nibble on some fun, tasty food.
With a few ingredients and minimal preparation, you can whip up a delicious picnic
meal that both the kids and the adults will delight in eating. When planning a kid's
picnic, make sure to have plenty of finger foods, lots of napkins, and a variety of
drinks to keep everyone hydrated.
Hummus, Veggies, And Pita Wedges
Yields about 3 ½ cups of hummus
2 15-ounce cans of chickpeas
4 cloves of garlic
4 tablespoons of lemon juice
4 tablespoons tahini (sesame paste)
11/2 teaspoons of cumin
1 teaspoon of paprika
Drain the chickpeas, and place in blender or food processor. Add remaining ingredients
and blend until smooth. If too thick, add water or olive oil.
Serve with pita bread wedges and raw veggies like celery, carrots, radishes, and zucchini.
Brown Sugar Chocolate Chip Cookies
Yields about 36 cookies
2 ¼ cups all-purpose flour
1 teaspoon salt
1 ½ cups firmly packed brown sugar
1 cup softened butter
2 teaspoons vanilla
2 eggs
1 12 ounce bag chocolate chips
1 cups chopped nuts (optional)
Preheat oven to 375 degrees. Combine flour, salt, and baking soda in a medium size
bowl and set aside. Mix brown sugar, softened butter, and vanilla, and beat until
creamy. Add eggs and beat again. Add dry ingredients and mix well. Stir in chocolate
chips and nuts. Drop mixture by rounded spoonfuls onto ungreased cookie sheet.
Bake 8 to 10 minutes or until golden brown. Cool on baking rack.
Picnic Punch
Yields 12 one cup servings
2 quarts cranberry juice cocktail
1 can (6 ounces) frozen pink lemonade concentrate, thawed
1 quart club soda
In large leak-proof container, mix cranberry juice cocktail and lemonade. Add club
soda and stir. Add ice cubes to keep cool for picnic.
