Picnic Dessert Recipes

scrumptious dessert can make the experience even sweeter. The best picnic desserts
are those that can travel well and be eaten with the hands, rather than with a fork
or spoon. Cream pies that can spoil if not chilled properly and frozen treats that
can melt don't make the best choices for a picnic. Easy to pack and eat brownies
and cupcakes are much better options, and they are always crowd favorites.
Moist, rich brownies are not only delicious, they are incredibly easy to make and
versatile. You can vary a simple brownie recipe by adding chocolate chips,
marshmallows, or chopped nuts. You can serve them straight from the pan, frost
them with chocolate icing, or dust them with a light sprinkle of confectioner's sugar.
Festive cupcakes are a more picnic-friendly alternative to a cake. From a simple
box of cake mix and a few everyday ingredients, you can make decadent confections
that will have your guests wanting more.
Picnic Brownies
Yields 16 brownies
4 ounces unsweetened chocolate
2/3 cup butter
1 ½ cup sugar
½ cup brown sugar
4 eggs
1 ½ teaspoon vanilla
1 ¼ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
Optional: 1 cup chocolate chips, marshmallows, or chopped nuts
Preheat oven to 350 degrees. Grease baking pan 13 x 9 x 2 inches. Melt chocolate
and butter in large saucepan over low heat. Remove from heat and mix in sugars,
eggs, and vanilla. Stir in remaining ingredients and spread evenly in pan using a spatula.
Bake 30 minutes or until brownies begin to pull apart from sides of pan. Cool
slightly and cut into squares. If desired, dust with powdered sugar or frost
with chocolate frosting.
Devil's Food Cupcakes With Vanilla Buttercream Icing
Yields 16 cupcakes
Cupcakes
16 paper cupcake cups
1 package devil's food cake mix
1 cup water
1 cup mayonnaise
3 large eggs
2 teaspoons vanilla extract
Preheat the oven to 350 degrees. Place paper cups into cupcake pan. Place the
cake mix, water, mayonnaise, eggs, and vanilla in a large mixing bowl. Blend
with an electric mixer on low speed for 30 seconds. Scrape the sides of the bowl.
Blend an additional 2 minutes on medium speed. Divide batter evenly in cupcake
cups using a ladle or measuring cup. Place the pan in oven and bake for 20-25 minutes.
Vanilla Buttercream Icicng
1 cube of butter softened (8 tablespoons)
3 teaspoons vanilla extract
4 cups powdered sugar, sifted
3 tablespoons milk
Place butter, vanilla, and 1 cup of sugar in a mixing bowl. Blend with an
electric mixer on low speed for 30 seconds. Add remaining sugar and milk and
mix on low speed until frosting is light and fluffy. Frost cupcakes
