Simple Kids Picnic Recipes
With families frequently too busy during the week to eat meals together, a simple picnic on a weekend day can be the perfect opportunity to reconnect with the kids and have some fun. By assembling a few simple, easy to pack food items that the children can help prepare, you will have an outdoor feast that everyone will enjoy.
Pita pizzas are a fun and easy to make, as well as being ideal for packing in a picnic basket. To encourage your kids’ culinary help, let them create their own pizzas with a variety of toppings like grated mozzarella cheese, sliced mushrooms, and olives.
If you are a yogurt eater, you have probably thrown out many of those individual yogurt containers with the lids. Instead of tossing them, wash them in the dishwasher and save them for a picnic. They are absolutely perfect for holding single servings of Jell-O fruit salad. Once you have filled the containers, you can pop the lids on and carry them conveniently to your picnic.
Handfuls of crunchy granola are a healthy alternative to chips, as well as incredibly easy to make. Let the kids concoct their own mixtures of oats, nuts, and dried fruits. Serve granola with a selection of fresh fruit like bananas, apples, and oranges.
When you pack up your picnic items, don’t forget to bring the following:
- Tablecloth or blanket to sit on
- Forks, spoons, and knives
- Napkins or a roll of paper towels
- Bug spray
- Wet wipes
- Cold bottles of water and juice (freeze overnight)
Yields 12 pizzas
6 pita bread pockets, opened and pulled apart to create 12 pita rounds
Jar pizza sauce
Toppings such as mushrooms, pepperoni, olives, bell peppers, sliced tomato.
Place pita rounds on greased cookie sheet. Spread thin layer of pizza sauce on pita. Sprinkle with cheese and other toppings. Place under broiler in oven until cheese is melted and bubbling.
Yogurt Cup Jell-O Fruit Salad
Yields 4 cups
1 – 3 ounce box strawberry Jell-O
1 banana sliced
1 cup sliced strawberries
Stir 1 cup boiling water into Jell-O mix in medium bowl. Continue stirring for two minutes until completely dissolved. Add one cup of cold water and stir. Refrigerate for 1- ½ hours or until thickened. Stir in banana and strawberries. Scoop into yogurt cups and refrigerate at least 4 hours or overnight.
Crunchy Picnic Granola
Yields 8 servings
2 cups uncooked oatmeal
¾ cup chopped pecans
¼ cup wheat germ
¼ cup honey
¼ cup canola oil
1 ½ teaspoons vanilla extract
½ cup raisins
½ cup chocolate chips
Preheat oven to 325 degrees. In a large bowl, mix together oatmeal, pecans, and wheat germ. In a small bowl, combine honey, oil, and vanilla extract. Pour honey mixture over dry ingredients and combine thoroughly using hands or wooden spoon. Spread mixture evenly on greased cookie sheet and bake for 20 minutes. Remove from oven and sprinkle with raisins and chocolate chips. Gently toss with spoon on cookie sheet. Bake an additional 10 minutes. Allow granola to cool before placing in storage bags.
